I have never been one to cook from a recipe book but as I stated in my last post 'The I Quit Sugar Hairy Dieters Recipe Books' I really wanted to try making something from one of the new books I bought, and so I did and I now present you with 'Turkey Chili with Cauliflower Rice minus the cauliflower rice' from 'The Hairy Dieters book 3'.
Mr J (My OH) is really fussy and after looking and looking through the books he finally chose something, but he didn't like the sound of cauliflower rice, so I did normal rice.
Below is pictures and descriptions of each step in the recipe.

So to make this recipe, you need:
Vegetable Oil (I chose to use Olive Oil)
500g Turkey Mince
1 Red Pepper
1 Red Onion
4 Garlic Cloves (Crushed)
2 Celery Stalks
1 Can of Chopped Tomato's
1 Can of Kidney Beans
1 Tsp Oregano
1 Tbsp Cumin
1Tbsp All Spice
1 Tbsp Of Chipotle Paste
Salt and Pepper for flavour
I also added mushrooms to this recipe as me and Mr J like them a lot so we add them to pretty much everything.
Chop the pepper, onion, mushrooms and celery in cubes and heat oil on a low heat, then add the vegetables and cook till soft.
Add the mince and cook till slightly brown, then add the oregano.
Add cumin, All Spice and Chipotle paste and stir and then add the chopped tomato's.
Add 250ml of water and stir, then stir in kidney beans, bring to the boil and then leave on a low heat for 30 minutes in till sauce has thickened.
While waiting boil some rice.
This tasted absolutely delicious, and Mr J was very surprised for how healthy it was!
It had a nice spicy tang to it and you couldn't really tell that it was Turkey mince instead of Beef mince, I will try it with cauliflower rice in the future but having a very fussy boyfriend makes it difficult to cook as I have to cook something he likes as well.
I will be trying more recipe's in the future so make sure to look out for them!
